I grew up eating my grandmother’s fresh baked bread, smeared with salted butter and slices of crispy radishes. Using that as inspiration, I created this Radish and Basil Compound Butter that is so simple to make and quite beautiful with the pink and green flecks. Ingredients
  • 3 small breakfast radishes, minced
  • 4 fresh basil leaves, minced
  • 1/4 teaspoon sea salt, or more to taste
  • 1/2 cup unsalted butter, softened
Directions
  1. In a medium sized bowl, stir radishes, basil and sea salt into softened butter. Using the back of fork works well to combine all of the ingredients. Adjust salt as needed.
  2. On a piece of parchment or wax paper, form the butter into a 1-inch wide log. Wrap the paper around the butter, pressing gently to make a smooth log, and roll to seal. Place in the refrigerator until ready to use.
  3. Unwrap the compound butter when ready to use and spread on bread or crackers, or serve over warm foods like meat or pasta to melt.
