Author Notes: this recipe comes from my older sister molly, she made this on a camping trip so she gave me the recipe and its great indoor grilling or winter days so I hope you enjoyAva Jalapeno Popper Romero

Serves: 6

  • 2 red onions
  • 2 big tomatoes
  • 4 ears of corn
  • 1/4 cup white or regluar balasmic vinegar plus more to coat onions
  1. slice the red onions into slices,(like youre making onion rings) but thick enough on the grill, do not seperate rings, just leave it as it is. marinate in 1/4 cup balasmic glaze before grilling. (you can grill the corn after boiling, but i just decide to leave it its color) grill the onions for 2-3 minutes on each side or less until done. cut corn off the cob and dice the warm onions, cut tomatoes and place in a bowl, add a little more balasmic glaze, if desired
