Ostrich Stuffed Peppers

Ironically the inspiration for these stuffed peppers came from a vegetarian cookbook. Instead of packing our peppers with tomatoes, using ground ostrich gives them a protein boost. If you can't get your hands on ostrich, the meat can easily be substituted for ground chicken, turkey or beef.

Ingredients
  • 2 peppers (red, yellow, orange)
  • 1 pound ostrich
  • 1/2 red onion
  • 1 teaspoon cumin
  • 1 serrano chili
  • 2 dashes feta
  • 1 splash coconut oil
  • 1 splash olive oil
  • 1 dash salt & pepper
Directions
  1. Preheat the oven to 400F.
  2. Start by cutting the peppers in half and removing the insides. Be careful not to puncture the pepper while doing this otherwise it will leak in the oven. For extra effect, leave the stalk in place, cutting it in half as you halve the pepper.
  3. In a skillet and with a little coconut oil, saute the garlic, chili, cumin and onions until soft. Turn the heat up a little to medium-high, add the ostrich and fry until brown. Season with the salt and pepper.
  4. Remove the ostrich from the heat, lay the peppers on a roasting tray and spoon the ostrich into the peppers. Drizzle with a little olive oil before placing in the oven and roasting until the peppers are soft and juicy with the edges beginning to brown, about 25 - 30 mins.
  5. Optionally, crumble a little feta on top and garnish with fresh cilantro.

There was some missing info in the recipe. It doesn't list garlic but then it says in the directions to add garlic. I just did a teaspoon but it could've used more.
Unfortunately it just definitely needed a sauce like with regular stuffed peppers that has rice and tomato sauce. The olive oil added at the end isn't enough. After preparing, I was looking at it thinking it was going to be lacking and needing more liquid. Should've known better and just added it. It also could've used more serrano, I used a pretty decent sized one and couldn't taste it. And I'm not sure why it says two peppers. I filled 6 halves, and probably could've done another one or two. The feta and cilantro was a surprisingly good combo to add though.

I suggest adding more serrano and garlic. Adding mushroom, a little cooked rice, tomato sauce, and some herbs and an extra pepper or two to fill. Then this would be good.
