Stuffed Pepper with Fried Egg

Ingredients
  • 2 bell peppers
  • 1 cup cooked cracked bulgur wheat
  • 2 tablespoons olive oil
  • 1 cup ground pork
  • 3 large cloves of garlic, minced
  • 1 small onion, chopped
  • 1/2 teaspoon oregano
  • 1/4 teaspoon basil
  • 2 tablespoons tomato paste
  • 1/2 cup hot water
  • 2 large eggs
Directions
  1. Heat 1 tablespoon of the olive oil in a large pot and add basil, oregano, onion and garlic. Saute until onions soften and become translucent
  2. Add ground pork and cook until browned, then stir in tomato paste, Loosen up the mixture with water. Add cracked bulgur wheat, then turn heat down and cover.
  3. While filling simmers, prep the peppers for baking. Slice the tops off of two large bell peppers and scrape the seeds out of them. Discard the tops. Set the peppers in a square baking pan lined with foil.
  4. Spoon pork and grain filling into hollow peppers. Top with cheese if you like. Monterey jack or mozzarella work well. Bake at 350 degrees for 40 minutes.
  5. When the peppers are done, pull them out of the oven to cool for about ten minutes. Put each pepper on a plate, and slice each one down the side to reveal filling.
  6. Pour the remaining tablespoon of olive oil into a small frying pan to heat. Fry each egg separately, then place one on each stuffed pepper. Serve immediately.
  7. *Add a small side salad if serving for dinner.

After frying all two gallons of eggs but only using two of them for the recipe what should I do with the rest of the fried eggs? I’ve got about one gross of eggs sitting on my counter cooked and ready to go! ;-)

I am so embarassed. I meant TWO eggs? But you could layer the cooked eggs with potatoes and chopped peppers and bacon, add tomato sauce and top all of that with shredded cheeseand backe it to make a casserole. OR slice the cooked eggs and serve with ham and salad, or make grilled cheese with egg. Eggs also go well with rice? Chop some of the cooked eggs and toss with a little turmeric, cooked jullienned carrots and scallions and serve that over jasmine or basmati rice, forbidden rice if you want to be fancy. You can make these things and freeze them so that you don't have to eat it all right away and risk driving up your cholesterol. Did I mention how extremely sorry I am? Should I send you some $$ for the extra eggs? I can paypal you.

LOL! You’re a delight! All excellent suggestions! I got a real kick out of your typo. I often may be multitasking and write something down that has nothing to do with the notes I may be taking but does with the conversation I’m having on a different topic at the same time! Now I’m curious about where the gallons came from!
