Avocado Scotch Eggs

Ingredients

Soft Boiled Eggs

  • 2 Eggs
  • splashes Vinegar

Avocado Scotch Egg

  • 3 bunches AP Flour
  • Bread Crumbs
  • 2-3 Avocados
  • Sriracha
  • Oil

Directions

Soft Boiled Eggs

  1. Bring Water to a Boil. add Eggs to boiling water and cook for 5minutes.
  2. Drain, cool and peel eggs.

Avocado Scotch Egg

  1. Mash up the avocados with salt and pepper.
  2. Roll the softboiled eggs in flour and gently wrap with the mashed avocado.
  3. Roll the avocado egg in bread crumbs.
  4. Fry until golden brown.
  5. Drain excess oil on a paper towel.
  6. Serve with Sriracha.
