Author Notes: Everyone loves guacamole, this recipe adds a great freshness with a hint of spice and what better way to conserve than serving in the avocado shell! —Beth Reed
- 2 Avocados
- 1 Large tomato
- 1 Lime
- 1 Clove of garlic
- 1 Small red onion
- 1/2 Jalapeño
- Finely chop the onions, garlic, jalapeño, and tomato and combine with the scooped out avocado in a large mixing bowl.
- Mash with a fork or use a potato masher until creamy, add salt and lime juice to taste.
- Serve in the shelled out avocado cups with tortilla chips and raw veggies and dip away!
