A super easy avocado recipe with an italian accent! —Claudia - Gourmet Project

  • Serves 1
  • 1/2 avocado
  • 100 grams penne pasta
  • 1/4 scallion
  • 1 red tomato
  • 1/4 splash lemon juiced
  • salt to taste
In This Recipe
  1. Follow package directions to cook the pasta.
  2. In the meantime mince the scallion; peel and finely dice the avocado and thinly dice the tomato. Put them all in a bowl. Add the lemon juice and a pinch of salt and mix well.
  3. Once the pasta is done drain it and season with the "guacamole". You can enjoy it hot or let it chill for a few hours in the fridge. It's always delicious!
