Roasted sweet potato Quinoa Salad

A creation we made up one night for dinner when we were running low on food in our kitchen. —Clean Life Creative

What You'll Need
Ingredients
  • 1 cup Cooked Quinoa
  • 2 handfuls Baby Spinach
  • 1 cup Roasted Sweet Potatoes
  • 1 tablespoon Cinnamon
  • 4 drops Balsamic Vinigarette
  • 1/2 cup White Onion
Directions
  1. Dice up a few sweet potatoes and throw them on a baking sheet with a little bit of olive oil, salt, pepper and cinnamon. Roast for 20-25 mins at 400. Cook 1 cup of quinoa as directed throw in a bowl and let cool Finely chop 1/2 a red onion When the potatoes are done begin to mix everything together in a large bowl and throw in 2 big handfuls of baby spinach. Drizzle in some olive oil and give it a good mix. I let it sit in the fridge to cool for a few hours before eating. Enjoy

Delicious recipe! I did notice however that the recipe didn't point out when to add cinnamon. It also said white onion in ingredients list and then red onion in method. Enjoyed it though!
