Blueberry Coconut Popsicles

Dairy-free, berry packed popsicles. The perfect healthy summer treat —Lynsey Walker // lynseylovesfood

What You'll Need
Ingredients
  • 1 400 mL can full fat coconut milk
  • 5 tablespoons maple syrup, divided
  • 1 teaspoon vanilla extract
  • 1 1/2 cups blueberries
  • 1 1/2 lemons, juiced
  • 3/4 cup water
Directions
  1. In a large mixing bowl combine coconut milk, 3 tablespoons of maple syrup, and vanilla extract. Pour into popsicle molds and let freeze for 15 minutes
  2. To a blender add blueberries, remaining maple syrup, lemon juice and water. Blend to combine.
  3. Add blueberry mixture to coconut layer. Allow to freeze for 30 more minutes.
  4. Insert popsicle sticks and continue freezing until solid (at least four hours).

My 4 year old daughter picked this popsicle recipe based on the picture and the mention of blueberries. I was running low on time so I just mixed the coconut mixture and blueberry mixture into one instead of doing 2 layers. It was so good! Would love to make it with other berries. Great, easy recipe and it was fun to make with my kids.
