Ingredients

carrots, peeled and grated

1/4 cup
raisins

1 cup
arrowroot

1/2 cup
coconut milk

1 teaspoon
cinnamon

1 teaspoon
baking soda

salt, pinch

3 tablespoons
butter

1/4 cup
macadamias
-
1 tablespoon
maple syrup

salt, pinch

butter, for sauteeing
Directions

For pancakes - Combine eggs, carrots, raisins, coconut milk, arrowroot, baking soda, cinnamon and salt.

For maple nut butter - combine butter, macadamias, maple and salt in food processor.

Sautee pancakes 1/4 cup at a time in well greased pan. I put made pancakes in the over on low so they're all ready at once.

Add a dollop of your maple nut butter to each pancake. Bacon, which goes with everything is delicious with these too
