Serves: 4

  • 4 eggs
  • 4 carrots, peeled and grated
  • 1/4 cup raisins
  • 1 cup arrowroot
  • 1/2 cup coconut milk
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • salt, pinch
  • 3 tablespoons butter
  • 1/4 cup macadamias
  • 1 tablespoon maple syrup
  • salt, pinch
  • butter, for sauteeing
  1. For pancakes - Combine eggs, carrots, raisins, coconut milk, arrowroot, baking soda, cinnamon and salt.
  2. For maple nut butter - combine butter, macadamias, maple and salt in food processor.
  3. Sautee pancakes 1/4 cup at a time in well greased pan. I put made pancakes in the over on low so they're all ready at once.
  4. Add a dollop of your maple nut butter to each pancake. Bacon, which goes with everything is delicious with these too
