This super-easy, flavorful tilapia recipe is the perfect weeknight meal for two. It's healthy and light and you'll find yourself experimenting with the ingredients and ratios whenever you pick up some tilapia fillets. Tilapia is packed with vitamins and a good source of omega-3 fatty acids. Baking them in the oven is a foolproof way to keep the fish moist and flaky. You also probably already have a majority of the ingredients called for in this recipe in your refrigerator or pantry. All you have to do is mix some butter, fresh lemon juice, garlic powder, oregano, and paprika (seasoned with salt and pepper) in a bowl, which you then pour over the tilapia. Simply bake for about 10 minutes and dinner is ready!
To round out the meal, serve with rice or roasted veggies or potatoes alongside. It's the perfect way to complement the light fish. Or make a large green salad for a delicious summertime meal. Instead of garlic powder, if you want to mix things up a bit (and don't mind washing another pan), you can sauté some chopped garlic and shallots or onions and stir into the butter mixture instead. Top with fresh herbs if you have some on hand as well. Depending on the type of paprika you use, you can add a pinch of red pepper flakes to give the dish a little bit of heat.
