Wow, this was great. I made it this weekend for a Halloween dinner party with a pumpkin and lentil salad. The roast came out perfectly, juicy and it was *devoured*. Will definitely make this again. Had intended to use the bbq, but it was unexpectedly wet so we used the oven instead. Cooked for just under 1.5 hours, 68degC inside, rested the rack and cut the crackling off the top and put it under the grill (broiler) for 10 mins to finish off the crackle - perfect!
