I love to do some baking on the weekends and this weekend I created these wee gems. Perfect thing to make plenty of and to have available for when you need it. The natural sweetness comes from the banana and honey, then the chia seeds and lemons add in texture and extra nutrients. Packed full of protein, good quality carbs and fats. The perfect wee treat. —Nicola Reilly

What You'll Need
Ingredients
  • 4 cups 4 cups almond meal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup shredded coconut
  • 1 banana mashed
  • 2 tablespoons chia seeds
  • 1/2 cup coconut oil
  • 1/2 cup melted honey
  • 2 zest of two lemons
  • 3 eggs
Directions
  1. Pre-heat oven to 170 degrees celsius. Grease muffin tins with coconut oil or butter
  2. Mix together all the dry ingredients (minus chia seeds), then add the oil, banana, honey and eggs. Mix until well combined then stir through the chia seeds.
  3. Place into a hot oven and cook for 20-25 minutes or until golden and a skewer comes out clean.
