Lamb Shank Italian Way

  • 2 tablespoons coconut oil or extra virgin olive oil
  • 1/2 teaspoon Pinch of sea salt and organic GF ground black pepper
  • 2 pieces organic celery stalks, cut lengthwise
  • 1 tablespoon organic GF sweet paprika
  • 1 piece organic GF bay leaf
  • 3 tablespoons organic pure tomato paste
  • 2 pieces lamb shanks
  • 3 pieces organic carrots, cut lengthwise
  • 1 piece organic sweet onion, sliced
  • 2 pieces garlic cloves chopped
  • 1 cup water
  • 1/4 cup red wine
  • 2 teaspoons fresh organic rosemary
  • 2 teaspoons organic GF dried rosemary
  • 1 piece organic tomato, chopped

  1. Preheat oven to 350 F
  2. Generously salt and pepper the lamb shank
  3. In a large creuset pot add coconut oil and lamb shank and brown on all sides, remove from pot and keep warm
  4. Add the vegetables and paprika and sauté for 3 minutes, return lamb shank to the pot and add remaining ingredients and stir
