Ingredients

2 tablespoons
coconut oil or extra virgin olive oil

1/2 teaspoon
Pinch of sea salt and organic GF ground black pepper

2 pieces
organic celery stalks, cut lengthwise

1 tablespoon
organic GF sweet paprika

1 piece
organic GF bay leaf

3 tablespoons
organic pure tomato paste

2 pieces
lamb shanks
-
3 pieces
organic carrots, cut lengthwise

organic sweet onion, sliced

garlic cloves chopped

1 cup
water

1/4 cup
red wine
-
2 teaspoons
fresh organic rosemary

2 teaspoons
organic GF dried rosemary

organic tomato, chopped
Directions

Preheat oven to 350 F
-
Generously salt and pepper the lamb shank
-
In a large creuset pot add coconut oil and lamb shank and brown on all sides, remove from pot and keep warm
-
Add the vegetables and paprika and sauté for 3 minutes, return lamb shank to the pot and add remaining ingredients and stir
