This is one of those sickly, sweet, desserts that you just can’t get enough of. Theres only 5 ingredients to this wonderful pie – or 6 if you want to add a bit of salt to give more depth to the flavour. I would honestly choose a raw, vegan dessert any day over a traditional one. The flavours actually taste real, and once you begin to eat more healthily, you’ll notice how everything ‘traditional’ actually tastes really artificial, and well, unpleasant. —Harriet Emily

Ingredients

raisins

peanut butter

2 tablespoons

Directions

1. Make the base by adding all of the base ingredients into a food processor, and blasting until all of the nuts have broken down and a shortbread like dough has formed. Scoop this out of the processor, and press into a small cake tin.

2. Spread the peanut butter layer over the base, until completely covered. You can use more if you want or if necessary.

3. Make the caramel top by combining the ingredients in a food processor and blending until the dates have broken apart, but still in small pieces (the right size so that the mix is spreadable). Spread this on top of the peanut butter, and sprinkle with walnut pieces if desired.

4. Place in the fridge and set for about 30 minutes. Then remove, slice, and indulge!
