Golden flax, spelt, oatmeal raisin cookies

What You'll Need
Ingredients
  • 85 grams butter
  • 65 grams caster suger
  • 55 grams brown caster sugar
  • 90 grams flaxseed
  • 105 grams spelt
  • 1 packet vanilla sugar
  • 1 pinch baking soda
  • 68 grams oatmaeal
  • 1 pinch cinnamon
  • 1 pinch cayenne pepper
  • 1 egg
  • 1 handful raisins or chocolate chips (if desired)
Directions
  1. Preheat oven to 170C (350F) In a bowl cream first 3 ingredients till smooth. Add the flaxseed again cream till smooth.
  2. In another large bowl mix all but the last 2 ingredients together to even the dry ingredients out.
  3. Add the butter flaxseed mixture to the large bowl, add egg, mix. Add raisins/chocolate chips (if desired). The dough will be thick and east to form into 2" balls. Place on lined cookie sheet and cook at 180C (350F) for 13-15 minutes. Remove and cool on a wire rack.
  4. Eet smaklijk!!

Dunno if this was the intent, but I used ground flax meal and spelt flour, and 2t vanilla extract. Also added a pinch of flaky sea salt and about 1/2 C milk chocolate chips. Just out of the oven they're good, but even better if they sit and cool. Tasty solution for a gluten-free, nut free, fairly healthy cookie!

I really enjoyed this recipe! It's a keeper for us. I think I will add a few chopped walnuts next time to complement the nutty taste of the spelt and flax. I didn't add the cayenne, but I can see how that would've been good, too! Incredibly easy, too.
