Preheat oven to 170C (350F) In a bowl cream first 3 ingredients till smooth. Add the flaxseed again cream till smooth.
In another large bowl mix all but the last 2 ingredients together to even the dry ingredients out.
Add the butter flaxseed mixture to the large bowl, add egg, mix. Add raisins/chocolate chips (if desired). The dough will be thick and east to form into 2" balls. Place on lined cookie sheet and cook at 180C (350F) for 13-15 minutes. Remove and cool on a wire rack.
