East Side/West Side - Cucumber Mint Cocktail

Inspired by a drink quaffed at Whitehall in downtown NYC, this is my favorite summer drink. Refreshing and pretty too. It is also nice during warm fall days and would be an refreshing alternative to eggnog for the holidays, with a festive look. (I might throw a sugared cranberry in for garnish to make the holiday theme more explicit.) —deanna1001

Ingredients
  • 2 ounces London dry gin
  • 4-5 Mint leaves
  • 1 ounce cucumber juice (see note)
  • 1/2 ounce simple syrup
  • juice of 1/2 lime
Directions
  1. Muddle mint in cocktail shaker. Add rest of ingredients and fill with ice. Shake shake shake about 20 seconds. Strain into chilled glass and enjoy!
  2. Note: To get cucumber juice either run regular cucumbers (no need for english or fancy ones and kirby's not juicy enough) through a juicer, or blend until pureed smooth and strain through a fine mesh sieve. Juice keeps in fridge for about a week.
