Kale Loaf Bread
Serves
1 loaf

So much kale this time of year... Sometimes I just can’t eat any more salad. So, I put the kale inside the bread.
Inspired by a Kale and Fetta Bread recipe on Souvlaki For The Soul blog. It is great because you don’t have to wait for it to rise…

Ingredients

  • 2.5 cup flour
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 3 cup kale, chopped finely
  • 1/2 cup fresh herbs (basil and mint), chopped finely
  • 1/2 cup Parmesan, plus a generous sprinkle
  • 2 eggs
  • 1/2 cup olive oil
  • 1 cup Greek yogurt, plain
