Peanut Brittle without a Thermometer

This recipe gets rave reviews each year I make it for my Christmas trays. It's easy to make, has a great crunch and packs up easy for mailing or giving away. —You Made That?

Ingredients
  • 1 cup sugar
  • 1/2 cup corn syrup
  • 1 cup raw peanuts
  • 1 teaspoon baking soda
  • 1 pinch salt
Directions
  1. Prepare cookie sheet or foil by spraying a light coat of cooking spray.
  2. Measure 1 tsp. baking soda and set aside
  3. In medium size pan, put corn syrup, sugar, and peanuts in the pan and cook on medium-high heat constantly stirring
  4. Stir until the peanuts start to turn light brown, the peanuts will start to smell cooked too
  5. Take off heat and add a pinch of salt and baking soda and stir well, it will puff up when the baking soda is added so be careful.
  6. Pour onto prepared pan and let it spread out

Believe it or not I actually signed up for username and login just to Leave a on this recipe which I found to be the simplest that I can find online and also very fluffy so you get that crunch I tried a different recipe online because it seemed like every recipe I clicked on involved the same ingredients... that had water and vanilla and butter and I took the initiative to just try it out because so many recipes seem to be based on the same steps with the same ingredients however after after trying that recipe I have to say I was extremely disappointed by the outcome due to the lack of crunch... This recipe definitely has the most fluffiness and simplest ingredients with the best taste that I found by far

I made this but used cashews instead of peanuts and it's a great recipe. So simple to make.
