Serves 1

  • 2 eggs
  • 2 slices of pumpernickel bread
  • 1 avocado
  • 1 teaspoon smoked paprika
  • 1 teaspoon lime juice
  • pinches salt and pepper
  1. Soft-boil the eggs (add them to boiling water for 5-7 mins)
  2. Lightly toast the pumpernickel toast
  3. Mix avocado in a bowl with lime juice, paprika, salt and pepper
  4. Spread avocado mixture on toast
  5. Strain and peal shell off the eggs - cut in half and lay on the avocado mixture open-faced
