Author Notes: A perfectly portioned and dessert-worthy baked oatmeal recipe featuring insanely addictive cookie butter. Lauren


Serves 1

  • 1/3 cup old-fashioned rolled oats
  • 1/4 teaspoon baking powder
  • 1/16 teaspoon Kosher salt
  • 2 tablespoons speculoos cookie butter
  • 1/3 cup milk
  • 1 egg white
  • 1/4 teaspoon pure vanilla extract
  1. Preheat oven to 350°F. Lightly grease a small ovenproof bowl.
  2. In a small mixing bowl, whisk together oats, baking powder, and salt.
  3. In a medium bowl, whisk together cookie butter and egg white until smooth; whisk in milk and vanilla extract.
  4. Pour dry ingredients into wet and stir with a rubber spatula until combined (be sure to fully mix the sticky cookie butter-milk mixture into the dry mixture). Spoon mixture into prepared bowl.
  5. Bake for 20 minutes, or until oatmeal is puffed and set.
