Roast Turkey Breast with Curry Leaves

Well, we bought a turkey breast and a bunch of curry leaves - i have never cooked with curry leaves before but they had a wonderful aroma. The turkey came out moist and tasty, with a bit of a smoky sort of flavour. very good. —reahpeah

What You'll Need
Ingredients
  • 1 turkey breast
  • 3-4 garlic cloves
  • 1-2 tablespoons olive oil
  • 1 teaspoon turmeric
  • salt and fresh ground pepper to taste
  • 1 bunch curry leaves
  • Splash white wine
Directions
  1. Brine your turkey breast for at least 1 hour. Pat dry. Preheat oven to 450. In a sturdy pot with a lid, place the curry leaves in the bottom of the pot. Leave enough room for the turkey with the lid on. Rub the turkey with the oil, cover with turmeric, salt and pepper. Place breast on top of curry leaves.
  2. Place turkey in oven at 450 for 15 minutes with the lid off. Add wine, turn down heat to 350 and put the lid on the pot. Bake for 25-30 minutes until the turkey is cooked - i recommend a meat thermometer. Let the turkey sit for 10-15 minutes before cutting. When you serve the turkey, you can spoon some of the liquid from the bottom of the pan onto the meat and also serve the roasted garlic cloves for extra flavour.
