Author Notes: A quick & easy vegan breakfast smoothie, that's creamy, delicious, and substantial enough to carry you through until lunch.
- 1 cup strawberries
- 1/2 cup rolled oats
- 1 tablespoon ground flax
- 1 tablespoon honey
- 1/2 teaspoon lemon juice
- 1/4 teaspoon lemon zest
- 1/4 teaspoon ground cinnamon
- 1 teaspoon unsweetened coconut flakes
- Add everything to your blender and blend until smooth
- Alternately, add the oats to the blender first and grind them fine. Then add the rest of the ingredients and blend until smooth
