Oven "fried" pork tenderloin medallions

What You'll Need
  • 1 pork tenderloin
  • 1-2 cups almond flour
  • 3 eggs
  • 1/4 cup almond milk or water
  • salt
  1. Place the whole tenderloin on your cutting board and remove the silver skin and excess fat. Cut the pork crosswise into one inch thick. Using the palm of your hand flatten the medallions and salt them.
  2. Line up your ingredients. Egg, beaten lightly with almond milk Almond flour
  3. Dip, one cutlet at a time, in the almond flour, then the egg, then the almond flour again Place on baking shit. Bake in the oven 25-30 min on 350 F. Halftime thought cooking turn over.
