Cold avocado soup

Serves: 4

Ingredients

  • 1 bag, avocado (5 small)
  • 1 Meyer lemon, juice
  • 2 cups cashew milk
  • 1 cup cashew sour cream
  • 1 teaspoon chilpotle sauce
  • Himalayan pink salts and white pepper

Directions

  1. Place everything in a blender, or if you lucky and you have Vitamix.
  2. Blend on high for about a minute until smooth and creamy.
  3. Serve chilled.
