Author Notes: This is a very fresh tasting simple pasta salad. It is also delicious with crumbled feta and chopped kalamata olives. Best in summer when ingredients are at their freshest!Dara

Serves: 4-6

  • 2 cups cooked orzo
  • 2-3 handfuls halved cherry tomatoes
  • 1 diced cucumber
  • 1 peeled diced carrot
  • 1/2 diced small red onion
  • handfuls mixed herbs such as basil,dill, Italian parsley
  • juice and zest of a lemon
  • 2-3 T olive oil
  • salt and pepper to taste
  1. Cook orzo al dente. Combine all ingredients and enjoy!
