This is a very fresh tasting simple pasta salad. It is also delicious with crumbled feta and chopped kalamata olives. Best in summer when ingredients are at their freshest! —Mamasays
Ingredients

2 cups
cooked orzo

2-3 handfuls
halved cherry tomatoes

diced cucumber

peeled diced carrot

1/2
diced small red onion

Handful
mixed herbs such as basil,dill, Italian parsley

juice and zest of a lemon

2-3 T olive oil
-
salt and pepper to taste
Directions

Cook orzo al dente. Combine all ingredients and enjoy!
