Ingredients

3 cups
cauliflower floretts

1/3 cup
white wine

1 tablespoon
dijon mustard

1 cup
shredded sharp cheddar
Directions

Preheat an oven to 400
Spray a small 8x8 baking dish with cooking spray and break up the head of cauliflower and place evenly in the baking dish, set aside.
Using a small sauce pan bring the wine and mustard to a simmer for 5-7 minutes until it has reduced by half. Add in the heavy cream and let mixture simmer for 5 more minutes.
Stir in ½ cup of cheese.
Pour cheesy mixture over cauliflower, top with the remaining cheese and bread crumbs if you are using them
Bake 25 minutes until bubbly.
