Garlic noodles with sauteed shrimp —Vy Tran

Ingredients
  • Fo the garlic noodles
  • 1 12-oz box of thin spaghetti (Barilla brand)
  • 2 tablespoons olive oil
  • 4 cloves of garlic (about 1 ½ tbsp), minced
  • 6 tablespoons unsalted butter
  • 3 tablespoons soy sauce (Kikkoman brand)
  • 1 tablespoon oyster sauce (Lee Kum Kee brand)
  • 1 tablespoon garlic powder
  • 1 ½ tablespoons sugar
  • 2 tablespoons pasta water
  • 2 tablespoons scallions, cut
  • 1 pinch freshly ground pepper to taste
  • For the sautéed shrimp
  • 1 pound tiger shrimp
  • 1 tablespoon olive oil
  • 1 clove of garlic, minced
  • 1 tablespoon oyster sauce (Lee Kum Kee brand)
Directions
  1. Bring a large pot of water to a boil. Add spaghetti and cook according to package directions, about 10 minutes. Drain in a colander.
  2. In a bowl, prepare garlic sauce by whisking together soy sauce, oyster sauce, garlic powder, sugar, and water. Set aside.
  3. In a large saute pan over medium heat, heat the oil. Add the garlic and saute until aromatic but not browned. Then add the butter to pan and let it melt. Cook until garlic is slightly brown.
  4. Add the garlic sauce to the pan and mix together until well combined. Keep on low heat.
  5. Toss the drained spaghetti into the pan and mix with garlic sauce. Add the scallion and set aside.
  6. For the shrimp, in a large saute pan over medium heat, heat the olive oil. Add the garlic and saute until it begins to soften.
  7. Add the shrimp and saute for 2 minutes. Then add the oyster sauce and simmer until the shrimp is cooked through and the flavors have combined, about 5 more minutes.
  8. Add the cooked shrimp to garlic noodles and toss until combined.
  9. Divide the noodles among 4 plates and top with additional scallions and freshly ground pepper. Serve immediately.

I made this tonight. It was a huge hit but having my noodles sit in the strainer for so long they were a big pile of stuck together mess & hard to work with. Did I overcook the noodles? I decided next time to try to have everything (noodles & shrimp) finishing up at the same time to get it put together sooner.
