Crepes with honey and walnuts

Makes 8


  • 2 eggs
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 cup flour
  • 1 cup milk
  • 1/2 cup sparkling mineral water
  • 1 small apple, graded
  • coconut oil for frying pan
  1. Put everything except apple into the blender and blend for 20-30 second or until no lumps remain.
  2. Add grated apples and blend quickly into batter just to mix.
  3. Pour 1/3 cup batter into the center of the hot oiled pan.
  4. Lift pan from stove, quickly tilt pan so that batter thinly cover bottom, return pan to stove and cook about 30 sec on each side.
  5. Transfer crepe to a plate, cover to keep warm. Repeat.


  • 1 cup ground walnuts
  • 1/2 teaspoon cinnamon
  • 1 lemon, zest and juice
  • 1/3 cup honey plus for drizzling
  1. Mix ground walnuts, cinnamon and lemon zest.
  2. Separately mix 1/3 cup honey and 2 tbs lemon juice.
  3. Sprinkle 2 tbs walnuts mix on half crepe, drizzle 1-2 tsp honey lemon mix all over.
  4. Roll or fold in half and then fold in half again.
  5. Sprinkle with cinnamon and drizzle with honey.
