Ingredients
-
2 pints
strawberries, sliced
-
2 pinches
fresh blueberries
-
1/4 cup
honey
-
1/2 teaspoon
almond extract
-
1/2 teaspoon
vanilla extract
-
1/4 cup
sugar
-
1 1/2 tablespoons
cornstarch
-
12
sheets phyllo dough
-
1 teaspoon
cinnamon
-
vegetable cooking spray
Directions
-
Preheat oven to 350˚. In a large bowl, stir together first 5 ingredients. In another bowl, combine sugar and cornstarch and toss with fruit. Let stand 20 minutes.
-
Pour mixture into a greased 2-quart baking dish. Bake 25 to 30 minutes or until fruit is almost tender and juices are just starting to bubble.
-
Meanwhile, lightly spray 1 sheet of phyllo dough with cooking spray and sprinkle with cinnamon. Top with a second sheet of phyllo and lightly spray. Gently crinkle and gather phyllo until it forms a 4-inch circle. Repeat with remaining phyllo and cinnamon.
-
When fruit mixture is cooked, place phyllo sheets on top and cook 5 to 10 minutes long or until phyllo is golden brown. Serve hot, warm or cold.
