Ingredients
  • 1/4 cup sparkling wine, riesling or other slightly sweet white wine
  • 3 large egg yolks
  • 3 tablespoons sugar
  • 1 tablespoon water
  • 1 1/2 pounds fresh cherries, strawberries or sliced peaches (about 4 cups)
Directions
  1. Whisk together first four ingredients in the top of a double boiler over gently simmering water. Cook, whisking constantly, until mixture thickens, triples in volume and has reached 160°F.
  2. Serve warm over assorted fruits.
