Fruit and Nut Bars

These dried fruit and almond bars are one of my favorite snacks. They are filling, healthy, and delicious. Think fruit roll up all grown up! With only 4 ingredients, and just 10 minutes of time, make this tasty treat for you and your family today! —Fallon Graham

Ingredients
  • 1 cup Almonds
  • 1 cup Prunes
  • 1/2 cup Dried Strawberries
  • 1/2 cup Dried Cranberries
  • 1 pinch Sea Salt
Directions
  1. In a food processor, pulse the almonds until the are chopped fine. Pour the chopped almonds in a bowl and set aside.
  2. Add the fruit to the food processor and pulse until a fruit paste forms.
  3. Add the chopped almonds back into the food processor, and a pinch of sea salt. Pulse until the ingredients are well incorporated.
  4. Pour the mixture into a gallon sized ziplock bag and roll out to a 1/4 inch thick rectangle. This will fill about 2/3rds of the bag.
  5. Place the bag in the freezer and let the bars set for at least an hour.
  6. After an hour, remove the bag from the freezer and remove the fruit and nut bar sheet. Divide into 12 bars.

fallon, 2 things: 1) Salt is a freebie so you only have FOUR ingredients in your recipe--just in case you want to add something.(52 declared saltandpepper and water were all freebies/don't count.)
2) where does your beautiful first name come from? is it Irish?

1) Oh I just saw that. Thanks. 2) Thank you. My name is my great great grandmother's last name. She immigrated here from Ireland. Her name was Mary Fallon. It means descendant of a ruler.

fallon, this is so cool! what do you think about adding orange zest, and/or some sort of seeds- for more texture- chia, poppy, toasted sesame....?

I think that is an excellent idea! I kept the ingredients to 5 because I wanted to enter them in the contest, but I think seeds and orange zest your add flavor and texture. I would only be mindful of how much extra dry ingredients I add because the fruit is the only thing holding the bars together. I initially made the recipe with 1.5 cups of almonds and some of the bars were crumbly. If you add seeds you might want to cut back a little on the almonds. If you try, please let me know how they come out! I am very interested. :)
