Almond Joy Chia Seed Pudding

Chia seeds soak overnight in almond milk to provide a simple base for this indulgent yet healthy spin on the classic candy bar. —Raven Marin

What You'll Need
  • 1 cup almond milk (vanilla or plain)
  • 0.5 cups chia seeds
  • 1.5 ounces dark chocolate, chopped
  • 0.5 cups flaked coconut, toasted
  • 0.25 cups almond, sliced
  1. Combine almond milk and chia seeds in a bowl and let soak in the refrigerator overnight, or at least 4 hours.
  2. When chia seeds have absorbed almond milk and resemble a thick pudding, stir and set aside.
  3. Alternate layers of chocolate, coconut, almonds and chia seed pudding in a glass.
  4. Top with extra coconut and almonds, and serve immediately.
