Author Notes: A new take on a classic! Fresh beet juice adds a sweet and earthy note to the rum and ginger beer combination.Camilla Maybee

Makes: 1

  • 2 ounces dark rum
  • 4-5 ounces ginger beer
  • 1/2 - 1 ounces fresh beet juice
  • fresh lemon slices
  • ice
  1. Fill a glass with ice.
  2. Pour the rum, ginger beer, and beet juice over ice.
  3. Garnish with lemin slices, squeezing fresh lemon juice to taste.
