Do you know when you cut a pineapple and you have to take all that pointy peel off? Have you ever wondered what you could do with that? Well, I have the answer: tea. Yes, tea. This concoction results in the most refreshing, tangy, slightly sweet summer drink, and you can put whatever you like in it. Infuse it with some mint, or rosemary, thyme... you pick. I went for cinnamon and ginger because it's my favorite, but do whatever floats your boat, friend. Oh, and you can also make it boozy, if you'd like. —Laura Biscaro

Ingredients
  • 1 pineapple peel, crown, scraps
  • 2 cinnamon sticks
  • 1 knob of ginger
  • Water, enough to cover
Directions
  1. Place everything in a medium pot and pour in your water. Set the heat up to medium-low, and let it simmer for about 25 minutes. Cover the pot with a lid and let it infuse for 20 more minutes.
  2. Then just strain everything into a jar and place it in the fridge until cold. You can also drink it hot, it's very delicious.

I used organic pineapple, scrubbed the ginger, regular cinnamon. I love this drink.

This was such a hit on Thanksgiving Day, after our big hike and while the turkey was roasting. Plus, we had cold, super ripe pineapple to snack on for the next few days, as I bought the pineapple in the first instance for this drink. Just wonderful. Highly recommend. ;o)

I am making this now but using star anise instead of cinnamon. I hope it turns out! I break down a pineapple every week to cut up for my lunches, so I'm excited to make something good with the scraps.

Thanks very much! I have always wondered about that this use of the 'leftovers' from prepping a pineapple. One of my favorite fruits.
