Ingredients

2 cups
demerara crystals

1 cup
fresh pressed ginger juice, double strained
Directions

In a small pot bring the ginger juice to boil and reduce to simmer.

Simmer until the liquid thickens slightly to a syrupy consistency. Watch it closely so it doesn't boil over or burn.

Once the liquid thickens remove it from the heat and let it cool. When cooled completely, store in a glass bottle. Keep at room temp as the syrup can tend to crystalize in cold conditions.
