Spring is in the air, and with it comes fresh fruit and warm sunny days. These blackberry mint ice pops are a refreshing treat, made with organic blackberries and mint, local organic honey, and creamy greek yogurt. —Fallon Graham
Ingredients
- Blackberry Layer

Blackberries

1/4 cup
Greek Yogurt

2 tablespoons
Honey

1 tablespoon
Sugar

Heavy Cream

1 teaspoon
Fresh Lemon Juice
- Mint Layer

Mint Leaves

Greek Yogurt

Pure Vanilla Extract

1 teaspoon
Mint Extract

Directions

Combine the blackberry layer ingredients in a food processor. Blend on high.

Divide half of the blackberry mixture into 6 ice pop molds to form the first layer. Place in the freezer and let the layer set for 30 minutes. Place the remaining blackberry mixture in the refrigerator to save for later.

Combine the mint layer ingredients in a food processor. Blend on high.

Divide the mint mixture between the 6 ice pop molds to form the second layer. Place in the freezer and let the layer set for 30 minutes.

Divide the rest of the blackberry mixture between the 6 ice pop molds to form the third layer. Insert a stick into each pop. Place in the freezer and let the ice pops set for at least another 2 hours.

Once the ice pops have set, remove from the molds and enjoy. Tip: Dunk the outside of the mold in warm water to loosen up the ice pops and make the easier to remove if needed.
