Put the flour, baking powder, sugar, salt and lemon zest in a large bowl and combine everything well.
Melt the butter over low heat and whisk together with the milk and egg.
Add the mixture to the dry ingredients and stir once more.
Heat a large skillet over medium heat and add some more butter or oil.
For each pancake put a bit of batter onto the skillet and bake until the surface has some bubbles. Flip carefully and cook until browned.
Repeat this until you have the desired amount of pancakes and serve with some fresh berries and maple syrup.
