Makes 1 big load

  • 3-4 cups oats
  • 1/2 cup walnuts (chopped)
  • 1/2 cup almonds (chopped)
  • 1/4 cup pumpkin seeds or sunflower seeds
  • 1/2 cup coconut flakes
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1 pinch of salt
  • 1/3 cup honey
  • 3 tablespoons canola oil or sunflower oil
  • 1/2 cup cranberries
  1. Preheat your oven to 160°C and line a baking sheet with baking paper. Mix oats, chopped walnuts and almonds, pumpkin seeds and coconut flakes in a large bowl. Add the brown sugar and spices. Pour over the honey and oil and mix well. Spread the granola on the baking sheet. Bake until golden, approximately 30 to 40 minutes and stir occasionally. Once the granola has cooled down, stir and break up pieces and mix in cranberries. Enjoy with some yoghurt and fresh fruit!
