- 1 pound mung bean sprouts
- 1 1/2 tablespoons scallions, chopped
- 1/2 teaspoon sugar
- 1 tablespoon sesame oil
- 1 tablespoon toasted sesame seeds
- 3 tablespoons soy sauce
- Clean mung bean sprouts and wash in cold water.
- Blanch bean sprouts in boiling water for 1 minute.
- Drain; rinse well in cold water, and drain well.
- Add remaining ingredients and chill thoroughly before serving.
