Serves 4

  • 1 pound mung bean sprouts
  • 1 1/2 tablespoons scallions, chopped
  • 1/2 teaspoon sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 3 tablespoons soy sauce
  1. Clean mung bean sprouts and wash in cold water.
  2. Blanch bean sprouts in boiling water for 1 minute.
  3. Drain; rinse well in cold water, and drain well.
  4. Add remaining ingredients and chill thoroughly before serving.
