Meatloaf is a comfort food that everyone had growing up, except for me. I grew up in a traditional Chinese home. I didn't have meatloaf until I was in college. Sadly to say, my college experience with meatloaf was not very good. I’ve tried many different recipes for meatloaf and this recipe is classic. The flavors are simple but the oatmeal helps to keep everything moist. This is great for dinner but also wonderful for lunch as a sandwich. Even though I didn’t grow up with meatloaf it is now a staple comfort food. Enjoy! —Elsa C.
- Serves 4-6
Extra Large Egg
small onion diced finely
small carrot diced finely
cloves of garlic
links of sasuage (I use italian chicken)
- Preheat the oven to 375 degrees.
- Sauté onions, carrots, and garlic over medium heat until the vegetables of soft and translucent. Remember to add salt and pepper. (Should take about 5-7 minutes).
- In a large bowl, combine ground beef, ground pork, and sausage (remove casing). Make sure to salt and pepper the meat. Add the rest of the ingredients, 1 extra large egg, Worcestershire sauce, parsley, and oatmeal.
- Once the vegetables are cooked, let them cool, and add to the meatloaf mix.
- Use hands to combine all ingredients. Make sure not to over work the meat. If using a loaf pan, make sure to butter or grease the pan. I use a large dish and just form the meat into a loaf shape.
- Into the 375 degrees oven for 45- 50 minutes.
