This is a very simple recipe but it just couldn’t get better. Salty new potatoes covered with lemony-garlicy-herby olive oil: my dream spring beachy dish. —greenevi

Ingredients
  • 500 grams new potatoes
  • 3 tablespoons olive oil
  • 1 bunch fresh herbs (I used rosemary, thyme, basil, oregano, wild garlic)
  • 1 clove of garlic
  • 1 lemon
  • 1 pinch salt
  • 1 pinch pepper
Directions
  1. Cook potatoes in salty water for about 15 minutes, until tender but not falling apart. Drain potatoes.
  2. Heat up olive oil in a large pan or wok and add potatoes. Cook for 5-10 minutes tossing occasionally until golden brown.
  3. Add chopped herbs, crushed garlic, salt, pepper and juice of a lemon and mix well together. Enjoy!
