Ingredients
  • 8 cups seedless watermelon flesh, cubed
  • 2 tablespoons fresh lime juice
  • 1/4 cup honey, plus more, to taste
  • 6 tablespoons chocolate chips, coarsely chopped (optional)
Directions
  1. Blend the watermelon, lime juice, and honey in a blender. Strain through a fine mesh sieve; you should end up with almost 5 cups of liquid.
  2. Taste, and add more honey, if necessary, until it almost tastes too sweet. Churn the watermelon juice in an ice cream machine.
  3. When it is mostly frozen (you can stop before it reaches soft serve consistency), stir in the chopped chocolate. Fill your popsicle molds and freeze.

I made this last summer and added fresh basil instead of the chocolate. Delicious! However, during freezing the pulp separated from the water. The bottom of the popsicles were full of flavor and the tops were just water. Ideas on how to fix this for this summer?

I think watermelon juice will naturally separate given enough time so is there any way you can freeze your popsicles faster? Maybe use smaller popsicle molds?
