Author Notes: One of my families favorite dishes to cool off the summer heat! It was inspired by a Japanese recipe I found on the internet many years ago. I adapted it to the contents of my cupboard and added some fresh mint leaves for an extra refreshment.Daniela

  • 1000 grams watermelon
  • 2 tablespoons lemon juice
  • 4 tablespoons elderberry syrup

  • 1 pinch coarse sea salt
  1. Cut the watermelon in large pieces and remove the seeds. Chop mint leaves into very fine strips . Blend lemon juice and elderberry syrup with the watermelon.
