Watermelon Granizado Drink

One of my families favorite dishes to cool off the summer heat! It was inspired by a Japanese recipe I found on the internet many years ago. I adapted it to the contents of my cupboard and added some fresh mint leaves for an extra refreshment. —Daniela

What You'll Need
Ingredients
  • 1000 grams watermelon
  • 2 tablespoons lemon juice
  • 4 tablespoons elderberry syrup
  • 0.5 handfuls fresh mint leaves
  • 1 pinch coarse sea salt
Directions
  1. Cut the watermelon in large pieces and remove the seeds. Chop mint leaves into very fine strips . Blend lemon juice and elderberry syrup with the watermelon. Add chopped mint leaves and pinch of salt and fill into a cake tin lined with cling film. Put into the freezer for at least four hours or until firm. Take the Watermelon Granizado out of the freezer 30 minutes before serving. Scratch the surface with a fork and fill into glasses.
