Watermelon noodles

Don't throw watermelon rind, they make a nice side dish for grilled food and they are perfect on their own. —anka

Ingredients
  • 1 5-6 pound watermelon (watermelon rind noodles)
  • 1/3 cup extra virgin olive oil
  • 1/2 cup parsley, chopped
  • 1/2 preserved lemon
  • black pepper
  • chili flakes ( optional )
Directions
  1. Cut watermelon into manageable pieces and remove as much of the red as possible it is OK if a bit remains.
  2. Remove the green outer part of the rind.
  3. With julienne peeler or mandolin cut rind into the noodles.
  4. For sauce. Scrape pulp and wash preserved lemon, chop coarsely and put in small food possessor, add parsley, black pepper and chilli flakes. Pulse. Keep going until you like the texture. You will need 1-2 teaspoons ( approximately ) sauce for 1 cup of noodles
