Coconut Chips

What You'll Need
  • 1 piece fresh coconut
  1. Preheat oven to 400°F.
  2. Open coconut and halve
  3. Slice thinly with mandolin, or shave slices off with vegetable peeler.
  4. Place coconut shavings onto baking sheet in single layers
  5. Bake 5-8 minutes until they begin to brown.

Toss with a little salt after toasting. This was a staple at some of the cocktail bars in Grand Cayman years ago
