Makes 3 cups
- 1 piece fresh coconut
- Preheat oven to 400°F.
- Open coconut and halve
- Slice thinly with mandolin, or shave slices off with vegetable peeler.
- Place coconut shavings onto baking sheet in single layers
- Bake 5-8 minutes until they begin to brown.
