Ingredients
  • 2 cups white rum
  • 8 1/2 ounces Liber & Co. Pineapple Gum Syrup (or 1 1/4 cups sugar dissolved in 1 cup pineapple juice)
  • 1 cup freshly squeezed lime juice
  • 1 1/2 cups water
  • freshly grated nutmeg, to garnish
Directions
  1. Mix all ingredients together in a large punch bowl and chill with a block of ice (if available).

This is lovely; I was looking for a light spring punch to serve to parents at a birthday party. I couldn't find syrup, so I made it as directed with raw sugar and pineapple juice. We made a test batch and I found it to be a little too sweet, so I did an additional 1/2 cup of lime juice. I also added a bunch of mint sprigs to infuse it slightly, which I removed before serving, then adding 1 1/2 cups of plain seltzer to give it some light fizz.
