Put all the dry ingredients in a bowl. Add egg and mix. Add the butter and stir until the butter is well absorbed by the dough. Finally add water until a having a smooth paste. Adjust with flour if the dough is too sticky. Let stand 1 hour, the dough will rise.
Once the dough has puffed, degas and then let stand at least an hour in the refrigerator.
Get the dough in the refrigerator once it has rested long enough. Spread it and place in a buttered pie plate. Remove the crust from Maroilles and cut into wafer to place it on the dough. Mix egg, cream, milk, salt and pepper, then remove the Maroilles.
