Teriyaki-Glazed Salmon

Very loosely adapted from a Nigella Lawson recipe by way of my mother, by way of me being lazy on weeknights. This salmon is so easy you could memorize it—and you should. —Leslie Stephens

What You'll Need
Ingredients
  • 1/4 cup mirin
  • 1/4 cup soy sauce
  • 1/4 cup plus 3 tablespoons brown sugar
  • 1 16-ounce filet salmon
Directions
  1. Preheat the oven to 425° F. In a shallow dish, mix together the mirin, soy sauce, and 1/4 cup of the brown sugar. Marinate the salmon for 3 minutes on one side, then 3 minutes on the other.
  2. Place the salmon in a shallow baking dish, add the remaining 3 tablespoons of brown sugar over the top, then bake for 12 minutes, until almost cooked in the center at the thickest part. Optional: Reduce the mirin sauce in a small sauce pan while the salmon bakes, and spoon it over the top to serve.
