Very loosely adapted from a Nigella Lawson recipe by way of my mother, by way of me being lazy on weeknights. This salmon is so easy you could memorize it—and you should. —Leslie Stephens
Ingredients

1/4 cup
mirin

1/4 cup
soy sauce

1/4 cup
plus 3 tablespoons brown sugar

16-ounce filet salmon
Directions

Preheat the oven to 425° F. In a shallow dish, mix together the mirin, soy sauce, and 1/4 cup of the brown sugar. Marinate the salmon for 3 minutes on one side, then 3 minutes on the other.

Place the salmon in a shallow baking dish, add the remaining 3 tablespoons of brown sugar over the top, then bake for 12 minutes, until almost cooked in the center at the thickest part. Optional: Reduce the mirin sauce in a small sauce pan while the salmon bakes, and spoon it over the top to serve.
